Ceylon cinnamon is also known as Canehl or Caneel cinnamon or “the good one“. This is because its coumarin content is significantly lower than that of Cassia cinnamon. Originally, Ceylon cinnamon comes from Sri Lanka (formerly Ceylon). However, the very high quality Spicebar cinnamon is sourced from Madagascar. It is characterized by its slightly sweet and spicy, but also mildly fine aroma, a little reminiscent of apple.
